Almond milk is essentially a drink made from finely ground almonds and water. It has been around as an animal milk substitute since the Middle Ages.
You will find that those following a paleo or lactose-free diet favour this silky smooth extract because of its long list of health benefits. Unlike animal milk, almond milk contains no cholesterol or lactose and it is vegan- and vegetarian-friendly. Soy milk also seems to be losing ground to this nutty competitor.
Almonds are rich in nutrients including fiber, vitamin E, magnesium, selenium, zinc, potassium, iron, copper and calcium. Potassium is great for keeping your blood pressure stable and vitamin E keeps your skin looking healthy and radiant. The nuts are also good for reducing a spike in glucose and insulin levels that usually occurs after eating, making almond milk a good choice for diabetics.
The nuts are devoid of saturated fats and are naturally high in monounsaturated fats, which is believed to be a good fat that your body requires to function properly. It still only contains about 40 calories (or 168 kilojoules) per cup to skim milk’s 100 calories per cup. Everyone stands to benefit from this wondrous elixir, so consuming it in moderation as part of your existing diet is unquestionably recommended.
Almond milk can also be used in cooking as a substitute for dairy in soups, desserts, ice-cream and smoothies just to name a few. It also adds a creamy and nutty flavour to vegetable purees.
